A waffle is a delicious dish made from batter or dough.

To make one, you cook the mixture between two patterned metal plates. These plates press the dough into a specific size and shape. This creates the famous surface pattern we see on every waffle. People eat them all over the world today. In Belgium, there are over a dozen different regional varieties.

Some waffles are served fresh and warm. Others are baked, packaged, and even sold frozen.

Making waffles involves a simple but careful process.

Early recipes suggest beating eggs in a bowl. Then, you add salt and wine to the mix. You toss in flour and mix it all together. To cook them, you fill two irons with a small amount of paste. This amount might be as large as a slice of cheese. You close the iron to cook both sides at once. If the dough sticks, you can coat the iron with oil or grease first.

Long ago, waffles grew from much simpler foods.

In ancient times, Greeks cooked flat cakes between hot metal plates. By the 9th or 10th centuries, two types of irons appeared. One type was for communion wafers used in church. The other was for oublies, which were light pastries. These oublies were often round and made from grain flour and water. By the 15th century, irons began to change shape. Some became rectangular, and the classic grid pattern started to appear.

History shows how waffles became more special over time.

In the 16th century, King Charles IX of France loved them so much he had silver irons. In 1560, his successor made laws to stop fights between waffle makers. Later, the use of yeast changed everything. Yeast helped the dough rise and made waffles much thicker. This meant cooks could use deeper irons to make them. By the 18th century, sugar became easier to get. This allowed for many decadent and sweet recipes.

Today, we recognize many different styles of waffles.

The Brussels waffle is a very famous variety. There is also the Liège waffle, which uses a special dough. This dough is called brioche and contains pearl sugar. Another popular kind is the stroopwafel, which is a Dutch treat. Even in the 1700s, people in New Jersey held "wafel frolics." These were special waffle parties. It is fun to see how one simple idea became so many tasty treats.
