It is usually made by mixing flour with a liquid like water, milk, or yogurt. Salt is often added to give it flavor. Once the dough is ready, it is rolled out until it is very flat. Some flatbreads are unleavened, which means they do not use yeast to rise. Other types, such as pita, are leavened so they puff up. These breads can be as thin as one millimeter or a few centimeters thick. This size makes them very easy to eat without needing a knife to slice them.

There are many ways to cook flatbread to get the perfect texture. You might bake it in a warm oven or fry it in hot oil. Some people prefer to grill it over hot coals for a smoky taste. You can also cook it on a hot pan, a metal griddle, or special tools called a tava or a comal. Some breads are eaten fresh right after they are made. Others are packaged and frozen so people can eat them later. This variety allows people everywhere to enjoy bread in different ways.

Evidence of people making bread has been found in ancient Mesopotamia, Egypt, and the Indus civilization. Many experts believe flatbread baking began in the Fertile Crescent in West Asia. From there, the tradition spread to many other parts of the world. In 2018, researchers found charred bread crumbs at a site in Jordan called Shubayqa 1. These crumbs date back to 12,400 BC. This was about 4,000 years before people even started farming in that region. The bread was likely made from wild barley, einkorn wheat, oats, and tubers.

In many parts of the Middle East, people use a traditional clay oven called a tandir.

This name comes from the ancient Akkadian word tinuru. During the Seljuk and Ottoman eras, these ovens were very common in Anatolia. To make the bread, people would stick the dough to the hot inside walls of the cylindrical oven. This type of baking is still a big part of rural life today. In local folklore, sharing fresh tandir bread is a symbol of young love. However, many younger people living in towns now prefer modern ways of making food.

Today, there are hundreds of different varieties of flatbread across the globe.

In Italy, you can find focaccia or the oval-shaped pinsa, which is left to rise for 72 hours. In Mexico and Central America, tortillas are a very important staple. In India and Pakistan, people enjoy naan, roti, or stuffed paratha. You can even find unique treats like the Filipino piaya or the Japanese okonomiyaki. Each culture has its own special way of mixing ingredients like cornmeal, rye, or rice. These breads connect us to the history of how people have eaten for thousands of years.
