Making chapati is a careful process that starts with atta. Atta is a type of whole-wheat flour that is stone-ground.

You mix this flour with water to make a smooth dough. Sometimes, a little bit of salt or oil is added too. The dough must be kneaded by hand for 10 to 15 minutes. This helps it become firm and easy to work with. After kneading, the dough rests for a short time to become soft.

Once the dough is ready, it is shaped into small balls.

You can roll these balls into thin circles using a rolling pin. Some people use a machine called a chapati press to do this faster. To cook it, you place the dough on a tava. A tava is a flat iron griddle.

The bread cooks quickly on both sides. Sometimes, it puffs up into a ball called a phulka.

This happens because steam builds up inside the bread.

History shows that people have enjoyed these breads for a very long time. Evidence of foods like chapati goes back to the Indus Valley Civilization. The word chapati comes from the Sanskrit word for "flat."
