Injera is a sour, fermented flatbread that is very important in Ethiopia and Eritrea.

It looks like a large pancake with a spongy texture. This texture comes from many tiny holes on the top. These holes are very helpful for eating. They allow the bread to soak up juices from stews and salads. In these countries, injera is a staple food that people eat every day. It is much more than just a side dish. It acts as a plate, a spoon, and the food all at once.

Making injera is a careful way of working with simple ingredients. Traditionally, you only need teff flour and water. Teff is a special grain grown in the Ethiopian Highlands.

To start the sour taste, you add a liquid called ersho. This is a yellow liquid collected from previous batches of batter. The mixture must sit and ferment for two or three days. When it is ready, the batter is poured onto a hot, round griddle.

You pour it in a quick spiral from the outside toward the center. This creates a large, flat, and round piece of bread.

The history of this bread goes back a very long time. People have found circular griddles called mitads at archaeological sites from as far back as 600 AD.

The way people bake injera has stayed mostly the same since it began. In the past, women used large black clay plates over a fire. Today, many people use electric stoves or even non-stick frying pans. In 2003, researchers in Eritrea designed a new stove. This stove uses smaller fuels like twigs or dried dung to help families.

There are many different types of injera depending on the grain used. Teff is the preferred grain because of its unique smell and taste.

Teff seeds come in different colors like white (nech) and red (key). You can even mix them to make sergegna. Because teff can be expensive, some farmers use barley, corn, or millet instead. In the lowlands, people often use sorghum. In the highlands, barley is more common. Using other grains can change the symbolic value of the meal. White-grained teff is often seen as a higher status food because it costs more.

Injera is also part of a special way of sharing a meal.

People place hearty stews, called wat, directly on top of the bread. You use your right hand to tear off small pieces. Then, you use those pieces to scoop up the food. When the entire "tablecloth" of injera is gone, the meal is finished. This tradition has traveled far from Africa. It became more common in the United States during the 1980s and 1990s. Now, you can find injera in many grocery stores and restaurants around the world.
