Flatbread

language culture Maturity 11-13 Next article →

Flatbread is a fundamental category of bread characterized by its thin shape. It is typically produced by mixing flour with a liquid, such as water, milk, or yogurt. Salt is also a common ingredient used to enhance the flavor. Once the dough is prepared, it is rolled out into a flattened form. These breads vary significantly in thickness, ranging from less than one millimeter to several centimeters. This thinness allows them to be eaten easily without the need for slicing.

There are several ways to cook flatbread to achieve different textures. Some varieties are baked in an oven, while others are fried in hot oil. They can also be grilled over hot coals or cooked on a hot pan. Specific tools are used for this, such as a metal griddle, a tava, or a comal. Some flatbreads are leavened, meaning they use an agent like yeast to rise. An example of this is pita. Other types are unleavened, which means they do not rise.

Flatbreads represent some of the earliest processed foods in human history. Evidence of bread production exists in ancient Mesopotamia, Egypt, and the Indus civilization. Experts believe baking systems originated in the Fertile Crescent in West Asia. These traditions eventually spread to many other global regions. In 2018, researchers discovered charred bread crumbs at a Natufian site in Jordan called Shubayqa 1. These crumbs date back to 12,400 BC. This was approximately 4,000 years before the start of agriculture in that area.

Analysis of these ancient crumbs suggests they contained wild barley, einkorn wheat, and oats. They also likely included Bolboschoenus glaucus, which is a type of rush tuber. In the Middle East, a traditional clay oven known as a tandir was widely used. This oven was common in Anatolia during the Seljuk and Ottoman eras. The name tandir comes from the Akkadian word tinuru. This word evolved into tannur in Hebrew and Arabic, and tandır in Turkish.

In historical baking, unleavened tinuru bread was made using a specific method. Bakers would adhere the dough to the heated side walls of a cylindrical oven. This method remains central to rural food culture in certain parts of the world. In local folklore, sharing fresh tandır bread is even used as a symbol of young love. However, traditional baking cultures are changing. Younger generations living in towns often show a preference for modern conveniences over these old methods.

Global varieties of flatbread are incredibly diverse. In Italy, one might find focaccia or the oval-shaped pinsa. Pinsa was launched in 2001 and is left to leaven for 72 hours. In the Americas, tortillas are a staple made from corn or flour. In South Asia, varieties include naan, which is leavened with yeast, and roti. Other unique examples include the Filipino piaya and the Japanese okonomiyaki. Each region uses different grains like rye, millet, or rice.

These breads connect different culinary systems and historical eras. From the corn-based arepas of Colombia to the teff-flour injera of the Horn of Africa, flatbreads show human ingenuity. Some breads, like the Moroccan Tafarnout, are cooked in traditional clay ovens. Others, like the Mexican tortilla de rescoldo, are baked in campfire coals. This wide variety reflects how different environments and ingredients shape the way people eat.
