Making vinegar happens through a two-step process called fermentation. First, yeast turns simple sugars into alcohol. Next, tiny living things called acetic acid bacteria turn that alcohol into acetic acid. This can happen in two different ways. Slow methods can take many months or even a full year. This slow way creates a cloudy slime called the mother of vinegar. Fast methods use that mother of vinegar to finish the job in just a few days.

People have been making vinegar for a very long time. The first written records come from the ancient Babylonians around 3000 BCE. They made it from things like dates, figs, and beer. In China, the Zhou dynasty had special people called vinegar makers. These were professional jobs for royal households. In Italy, the famous balsamic vinegar began to grow in the Duchy of Modena. Later, a man named Karl Sebastian Schüzenbach invented a way to make it on a large scale in 1823.

There are many different types of vinegar from all over the world.

Vinegar connects many different cultures through food. In Greece and Rome, people often used vinegar made from wine. The Spartans even put it in a traditional blood soup called melas zomos. The acidity helped keep the broth from thickening too much. In Japan, rice vinegar became very popular for making sushi. This happened after Matazaemon Nakano discovered how to use sake lees for vinegar. Today, companies like Mizkan make vinegar for people everywhere.
