This process can extend the shelf life of food for months or even years. People use pickling to preserve many things like fruits, vegetables, mushrooms, and fish. It can even be used for meats, dairy, and eggs. Pickling changes how food tastes and how it feels in your mouth. This happens because the food sits in a very acidic or salty liquid. This liquid stops tiny things called enzymes and microbes from spoiling the food.

There are a few different ways to make a pickle. One way is to soak food in vinegar. Another way is called fermentation, which uses salt and brine. In some cases, you only need to add dry salt to food that already has moisture. This is how people make sauerkraut or kimchi. These foods use natural bacteria to create the acidity needed. People often add spices like garlic, mustard seed, cinnamon, or cloves for flavor.

The temperature and the amount of salt used will change the final taste.

Pickling is a very old tradition from around the world. People in ancient Persia and Mesopotamia likely used vinegar for pickling around 2400 BCE. In the Tigris Valley, archaeologists found evidence of pickled cucumbers from 2030 BCE. China is also known for early salt pickling. Even famous leaders used pickles in their lives. The Egyptian queen Cleopatra ate them for her health and beauty. Roman emperors gave pickles to their soldiers to help them stay strong for battle.

Different cultures have their own special names and styles for pickles. In South Asia, many people make achar using mango, lemon, or chili. They often mix these with oil and spices and let the jars sit in the sun. In Japan, pickled foods are called tsukemono. One type is called umeboshi, which is a dried plum. In Korea, kimchi is a very famous side dish made mostly of napa cabbage.

In the Philippines, people use large earthen jars for a process called buro. These traditions show how much people value these flavors.

Pickling has always been useful for long journeys. Before steam engines, sailors used salt pork and salt beef to stay fed at sea. It was also a great way to eat vegetables when they were not in season. Even though it started as a way to save food, people love it for the taste. Pickling can even add B vitamins to food thanks to the bacteria.
