People use dry salt or a salty liquid called brine. This method is a way of curing food. Most germs and fungi cannot live in a very salty place. This happens because of a thing called osmosis. Salt draws the water out of the tiny living cells. Without water, the germs die or stop working. This keeps meat, fish, and vegetables like cabbage fresh for longer.

There are many ways to use salt for food. One way is called corning. This uses large, coarse grains of salt rubbed into meat. The name comes from the Old English word for these salt grains. Another way is to use brine to soak the food. Some people also use smoke to help the process. Smoking adds chemicals to the surface of the meat. This means you might not need as much salt.

Humans have used salting for a very long time. In the 14th century, people had special ways to save venison. They would cover the animal with bracken plants first. Then they boiled the meat in brine and used dry salt. Salt was also very important for sailors on big ships. In the Age of Sail, the Royal Navy ate salted beef and pork. These foods had to stay good in barrels for months. Even in 1938, the crew on the ship Moshulu ate mostly salted meat. This was because they did not have refrigeration for long trips.

Many different foods come from this salty method. You might know names like bacon, ham, or jerky. Other names include biltong, cecina, jamón, and pastrami. Salted fish is also a staple in many parts of the world. This includes places like the Caribbean, West Africa, and the Arctic. People in Scandinavia and Southern China also eat salted foods. In the 19th century, people found a special pink salt. It is called Prague powder. This salt has sodium nitrite in it. It keeps meat looking red instead of grey.

Salting is also part of many special traditions. In Jewish and Muslim dietary laws, salt helps remove blood from meat. In Kosher Shechita, salting is almost always required. Using salt can also be a way to add flavor to vegetables. However, we must be careful with how much we eat. Eating too much salt can raise blood pressure. Some groups say that eating many salted foods can increase the risk of stomach cancer. It is a very useful tool, but it must be used wisely.
