Sometimes, cooks use it just to add extra flavor to a meal. It can even be used to wrap around other meats like shrimp or asparagus.

Making bacon is a special process called curing. In the past, people cured meat to keep it safe to eat for a long time. This was very important before we had easy ways to keep food cold. There are two main ways to cure meat. One way is called wet curing, where the meat soaks in a salty liquid called brine.

Another way is dry curing, where salt is rubbed directly onto the meat. Some people also smoke the bacon using wood, corn cobs, or even peat. This smoking process can take up to eighteen hours to get the flavor just right.

There are many different types of bacon depending on which part of the pig is used. Side bacon comes from the belly and has layers of fat and meat.
