Later, a man named Karl Sebastian Schüzenbach invented a way to make it on a large scale in 1823.
There are many different types of vinegar from all over the world. 


Vinegar connects many different cultures through food. In Greece and Rome, people often used vinegar made from wine. The Spartans even put it in a traditional blood soup called melas zomos. The acidity helped keep the broth from thickening too much. In Japan, rice vinegar became very popular for making sushi. Balsamic vinegar is a highly specialized and aromatic variety from Italy. Traditional balsamic vinegar is produced in the Modena and Reggio Emilia provinces. It is made from the concentrated juice, or must, of white Trebbiano grapes. The finest grades are aged in various wooden casks, such as oak, chestnut, or cherry, for 12 to 25 years. This high-quality version is marked "tradizionale" or "DOC" to protect its origin. Because it contains grape sugars, it has about 17% carbohydrates. This makes it roughly five times higher in calories than distilled vinegar. A cheaper version, aceto balsamico di Modena, is widely available and uses added caramel and sugar.
Cane vinegar is another major variety, especially popular in the northern Ilocos Region of the Philippines. It is called sukang Iloko or sukang basi. It can be made by letting bacteria act directly on sugarcane juice in large jars. Another method involves fermenting the juice into a wine called basi first. In northern India, a version called sugarcane sirka is made by putting cane juice in earthenware pots with iron nails. The resulting liquid turns blackish due to the presence of ferrous oxide and acetate.
History shows that vinegar making is an ancient human practice. The first documented evidence comes from the Babylonians around 3000 BCE. They used vinegar made from fruits, dates, figs, and beer for food and medicine. In China, the Zhou dynasty professionalized the craft. Noble households even employed specialized "vinegar makers."
