This special liquid is made from grape must. Grape must is juice from freshly crushed grapes. It includes the grape skins, seeds, and stems. People value this vinegar for its rich and glossy look. It is a prized part of many meals.

Making true traditional balsamic vinegar is a slow process. First, makers press Trebbiano and Lambrusco grapes. They cook the juice into a thick syrup called mosto cotto. This syrup then sits in a series of wooden barrels. These barrels get smaller as the liquid moves through them. The barrels are made from woods like oak, cherry, or chestnut.

This long wait helps the vinegar gain its deep color.

This tradition has a very long history in Italy. The story began in the city of Modena in the 11th century. By the year 1046, the vinegar already had a big reputation. Even King Henry III once asked for high quality vinegar. In the late 1200s, making vinegar grew at the Este Court. The name "balsamic" was first written in records in 1747.

There are different types of balsamic vinegar today. Traditional balsamic from Modena or Reggio Emilia must age for 12 years. Reggio Emilia uses colored labels to show the age. A red label means 12 years of aging. A silver label means 18 years. A gold label means 25 years or more.

Modena uses colored caps instead of labels. A white cap means 12 years of age. A gold cap means it is extra-old.

Many people also know the everyday version. This is called Balsamic Vinegar of Modena PGI. It is made on a much larger scale. It uses a mix of grape must and wine vinegar.

Some makers even add a little caramel to help the color. You might also see a thick balsamic glaze in stores. These products help bring the flavor of Italy to tables all over the world.
