This sauce comes from grape must. Grape must is juice from freshly crushed grapes. It includes the skins, seeds, and stems.

Some types are very special. They are made in Modena and Reggio Emilia, Italy. These are called traditional balsamic vinegars. They are made by cooking grape juice into a thick syrup.

This syrup sits in wooden barrels for a long time. It must age for at least 12 years. The barrels can be made of many woods. Some are oak, cherry, or chestnut. This long wait makes the vinegar thick and glossy.

There is also a type made for every day. We call this Balsamic Vinegar of Modena. It is made on a much larger scale. It uses a mix of grape must and wine vinegar.
