The name comes from a Genoese verb that means to pound or crush. This name describes the way the ingredients are made. People use a marble mortar and a wooden pestle to grind them. They move the pestle in a circular motion to crush everything together. This special sauce is a very important part of the food tradition in Liguria.

In fact, a group called the Palatifini Association wants to list it as a special world heritage.

Making traditional pesto follows a specific set of steps. First, you place garlic and pine nuts into the marble mortar. You grind them down until they turn into a smooth cream. Next, you add washed and dried basil leaves with some coarse salt. You continue grinding until the mixture reaches a creamy consistency. Only then do you add a mix of Parmesan or Grana Padano cheese. Finally, you add a little extra-virgin olive oil to help everything blend together.

This sauce has roots that go back to ancient times. The Romans ate a similar paste called moretum. That old recipe used garlic, salt, cheese, herbs, olive oil, and vinegar. During the Middle Ages, people in Genoa ate a sauce called agliata. That was a mash made of garlic and walnuts. Basil did not become the main ingredient until more recent years. The use of basil was first documented starting in the 1850s.

Many important people wrote about pesto in the 1800s. Emanuele Rossi published a book about it in 1852. Later, Giovanni Battista Ratto published his work in 1863. Ratto mentioned using Dutch cheese instead of Sardinian sheep's cheese. This was because Northern European cheeses were common in Genoa due to sea trade. Rossi revised his recipe again in 1865. In the United States, an early recipe appeared in 1928. It even included butter and cream. By the 1980s and 1990s, pesto became very popular in North America.

Today, you can find many different versions of this sauce. In Provence, France, people make a version called pistou. It uses basil, oil, and garlic, but usually no cheese. In Sicily, people make a red pesto using tomatoes and almonds. Some people use different nuts like walnuts, cashews, or even peanuts. You might also see different greens like kale, spinach, or mint. Some people even make a vegan version using miso paste. Pesto shows how one idea can change as it travels the world.
