Carbonara is a famous pasta dish from the Lazio region of Italy.

It is loved for its rich and creamy texture. This sauce is made using eggs, hard cheese, and black pepper. The dish also includes fatty cured pork for extra flavor. Many people enjoy it because it feels like a warm, comforting meal. It is a wonderful example of how simple ingredients can create something special.

Making this dish is a careful process. First, you cook dried durum wheat pasta in salted water. Next, you fry pieces of meat, like guanciale, in a pan. Guanciale is a type of cured pork jowl. While guanciale is traditional, some people use pancetta or bacon. Then, you mix raw eggs or yolks with grated cheese and pepper. You toss this mixture with the hot pasta away from direct heat. This gentle heat turns the eggs into a smooth sauce without curdling them.

The history of carbonara is a bit of a mystery. We do not have records of the name before the Second World War. Some people think the name comes from "carbonari," which means charcoal workers. Others believe it was a tribute to a secret society from the 1800s. A 1931 guide mentions a similar dish in Umbria, but it had no cheese. The name first appeared in a Dutch newspaper in 1939. It mentioned a restaurant in the Trastevere area of Rome.

Many historians believe the dish became popular after 1944. This was when Allied forces liberated Rome. Some say American soldiers helped create it by providing bacon and eggs. A cook named Renato Gualandi might have made it for a U.S. Army dinner. The first recipe in a cookbook appeared in Chicago in 1952. Later, in 1954, an Italian magazine published a recipe using pancetta and garlic. By the 1960s, the version with Pecorino cheese became very common.

Today, you can find many different ways to eat carbonara. Most Italians use Pecorino cheese, but some use Parmesan or Grana Padano. While spaghetti is the most common shape, some use rigatoni or penne. In other countries, people might add cream to make the sauce more stable. Some even add vegetables like peas or broccoli. It is a dish that connects the food traditions of Italy and the United States.
