Seasoning is a way to make food taste better.

It uses herbs, spices, or salts to boost flavors. This process helps the natural taste of food shine. Good seasonings do not taste strong on their own. Instead, they make the main ingredients taste much richer. A cook must choose flavors that complement each other. The timing of adding these items is very important too.

There are many ways to use these items. You can rub sea salt into beef or lamb. This helps to tenderize the meat. Some seasonings like basil or black pepper add their own flavor. You can also use oil to carry flavor. This is called an infusion. You can make an infusion using hot or cold methods. Olive oil works well for this task. However, you must keep infused oils in the refrigerator.

People have seasoned food for a very long time. Researchers found traces of garlic mustard seeds in old pots. These pots also contained traces of meat. This is the earliest record of seasoning food. It happened during prehistoric times. Seasonings were also used for things other than eating. For example, ancient Egyptians used cinnamon to make a perfume called Kyphi. Other spices were used in medicine. These are described in the Ebers Papyrus.

In 1903, Auguste Escoffier wrote about different groups of flavors. He wrote in a book called Le Guide Culinaire. He divided seasonings and condiments into many groups. One group is saline seasonings like salt or spiced salt. Another group is acid seasonings like lemon juice or vinegar. There are also hot seasonings like curry or paprika. Spice seasonings use essential oils like clove oil.

Escoffier also listed many types of condiments. Some are pungent, like garlic, onions, or chives. Other condiments are hot, such as mustard or ketchup. Some sauces come from places like America or England. He also grouped fatty substances together. These include butter and vegetable oils. Seasoning is a skill that connects us to the past. It turns simple ingredients into a special meal.
