This means avoiding red meat, poultry, and seafood. It also includes avoiding insects and freshwater fish. Some people choose to skip all animal by-products too. A person who follows this diet is called a vegetarian. People choose this for many different reasons. Some do it to show respect for animals. Others choose it for health, the environment, or taste.

Some people even choose it for economic or political reasons.

There are several ways to follow a vegetarian diet. Lacto-vegetarians eat dairy products like milk and cheese. Ovo-vegetarians include eggs in their meals. Lacto-ovo vegetarians eat both dairy and eggs. All of these groups usually eat honey.

The strictest version is called a vegan diet. Vegans do not eat any animal products at all. They might also avoid wearing leather shoes or silk clothes. This can be a hard job for some. They must watch for vitamin B12 in their food. They also check labels on packaged foods for tiny animal ingredients.

This way of eating has a very old history. The earliest records come from the 9th century BCE. In India, Jainism taught people to be non-violent toward all living things. This idea is called ahimsa.

Leaders like Parshwanatha and Mahavira helped spread these ideas. In ancient Greece, the Orphic movement also practiced vegetarianism. A famous teacher named Pythagoras was also linked to these diets. In the 600s CE, Emperor Tenmu made meat bans in Japan. These bans lasted during the busy farming months from April to September.

Many different places around the world embrace these diets. In India, some cities are entirely vegetarian. For example, Rishikesh banned meat, fish, and eggs in 1956.

Other towns like Amirim in Israel were founded on these principles. There are even special communities like The Farm in Tennessee. These places help people live out their beliefs together.

Vegetarianism has helped create many foods we love today. During the Song dynasty in China, Buddhist chefs were very creative. They used beans, mushrooms, and root vegetables to make meat substitutes.

They created foods like tofu, seitan, and konjac. These foods look and feel like meat but are made from plants. Many people still eat these delicious items today. Even in the 1800s, the Vegetarian Society was started in Manchester. This helped make the word "vegetarian" popular all over the world.
