These fungi are the fruiting bodies of certain species in the genus Tuber. Many people prize different types of truffles as delicious food. The white truffle is very valuable and grows in Italy.

Black truffles are also very popular around the world. Some truffles even grow in the United States. For example, the Oregon white truffle is known for its high quality.

These fungi are important for the health of our forests.

Truffles work through a helpful partnership with tree roots. This way of working is called ectomycorrhizal. The fungus lives very close to the roots of trees like oak or pine. The fungus provides valuable nutrients to the plant. In return, the tree gives the fungus carbohydrates for energy.

Because they grow under the dirt, wind cannot spread their spores. Instead, truffles use animals to move their spores around. When a truffle is ready, it gives off a strong smell. This smell attracts animals like deer, birds, or rodents. The animals eat the truffle and carry the spores to new places.

Scientists have studied how these fungi changed over a long time. Most evidence suggests that truffles evolved from mushrooms that grew above ground. Over time, the mushroom caps began to enclose the reproductive tissue. The stems and caps became smaller as they moved underground. This happened many times in different types of fungi. This process is called convergent evolution.

This means different groups of fungi found the same solution for living underground. The order Pezizales is about 400 million years old.

There are many different kinds of truffles to know about. The black Périgord truffle is named after a region in France.

It is often harvested in late autumn and winter. In the United States, the pecan truffle grows near pecan trees. These truffles can sell for about $160 a pound. In Italy, white truffles are found near cities like Alba and Asti. Some fungi, like the genus Rhizopogon, are used in nurseries. They help young trees grow during reforestation projects.

Learning about truffles helps us understand how nature works together. Just like a garden needs good soil, forests need these fungi. The fungi help trees stay strong during droughts. They also help move nutrients through the soil in a cycle.

Many animals, like the flying squirrel, depend on truffles to eat. This creates a three-way link between the trees, the fungi, and the animals. When you see a large forest, remember the tiny world working underground.
