While many people think sushi means raw seafood, it actually refers to the special rice used. This rice is seasoned with vinegar, salt, and sometimes sugar to give it a sour, savory taste. This rice is often called "shari" or "sumeshi." People combine this rice with many different things like seafood, vegetables, or meat. Some sushi even uses cooked ingredients like eel or egg.

It is a meal that offers many different flavors and textures in every bite.

There are many different ways to prepare and shape sushi.

One popular style is nigiri-zushi, which is a small mound of rice with a slice of fish on top. Another common type is makizushi, which are rolls made using a bamboo mat called a "makisu." These rolls are often wrapped in "nori," which is dried seaweed. You might also see inari-zushi, which are pouches of fried tofu filled with rice.

Some people enjoy chirashizushi, where the ingredients are scattered over a bowl of rice. Each style uses different skills to create a beautiful and tasty dish.

Sushi has a very long and interesting history.

Long ago, a style called "narezushi" was used to preserve fish. People would store fish in fermented rice for many months. In the Muromachi period, between 1336 and 1573, people created "namanare." This was a style where the fish was only partially fermented. This meant people could eat the rice and the fish together. This was a big change from the older way of throwing the rice away.

Modern sushi changed a lot during the Edo period.

Around 1824, a chef named Hanaya Yohei created nigiri-zushi. This was a fast food for the people living in Edo, which is now Tokyo. During this time, people began mixing vinegar directly into the rice. This made the process much faster because they did not have to wait for fermentation. This allowed sushi to become a quick and easy meal for many people. Today, we see many more varieties, like rolls filled with salmon, tuna, or even cheese.

Sushi has even changed how we eat in restaurants.

In 1958, Yoshiaki Shiraishi opened the first "kaiten-zushi" restaurant. This is what we call conveyor belt sushi. In these restaurants, plates of sushi move along a belt past the diners. You can simply pick the plates you want to eat. This made sushi more casual and affordable for everyone. It is a fun way to experience many different kinds of sushi at once.
