The most important part is the rice. This rice is seasoned with vinegar, salt, and sugar. It has a sour taste. People often call this vinegared rice "shari."

There are many ways to make it.

One common type is nigiri-zushi. This is a small mound of rice with a slice of fish on top. A chef named Hanaya Yohei made this style in the 1820s. It was a fast food for people in the city of Edo.

You can also find makizushi. This is a roll made with a mat called a "makisu." These rolls often use nori, which is dried seaweed, to wrap the rice.

Some rolls have fish, while others use vegetables like cucumber.

Some sushi is even shaped like a pouch. These are called inari-zushi. They are made of fried tofu filled with rice.

In some restaurants, sushi travels on a moving belt. This is called conveyor belt sushi. You can simply pick the plates you want to eat.
