In France, people used lots of salt to pickle it. In Japan, people call it saba. They use salt and vinegar to make a sushi called saba-zushi. This helped people move the fish to cities far from the sea.

Today, we can put mackerel in cans. The fish is put in liquid like brine or vinegar. Then, heat kills the tiny germs that cause spoilage. This lets the fish stay safe for a long time. The bones in these cans are very soft. They are a good source of calcium.

People like this fish for different reasons. In South Korea, it is a very popular seafood. However, some people used to avoid it. In the 1970s, many people in the UK did not buy it. This was due to old stories. Now, many people know it is a great food.
