There are a few different ways to get salt. Some salt is taken from deep mines in the ground. This is often called rock salt or halite.

Other salt comes from seawater or mineral-rich spring water. People let the water evaporate in shallow pools to leave the salt behind.

This process is called evaporation. Once it is collected, salt can be refined into table salt for our kitchens.

Humans have used salt for a very long time. People in Romania were boiling spring water for salt around 6050 BC.

In China, salt was also harvested from lakes around 6000 BC. Ancient groups like the Greeks and Romans prized salt very highly. It was used to preserve meat so it would not spoil. Because it was so valuable, salt was used as a way to trade goods. In some places, like Abyssinia, slabs of rock salt were even used as coins.

Salt has caused many big changes in history. Nations have gone to war over salt because it was so hard to find.

Governments also used salt taxes to make money. In India, Mahatma Gandhi led a huge march in 1930 to protest a salt tax. He showed people how to make their own salt from the sea. This helped the movement for Indian independence. Today, the world produces about three hundred million tonnes of salt every year. Most of this is used for making chemicals, de-icing roads, or for farming.

We use salt in our lives every single day. Most table salt contains about 97 to 99 percent sodium chloride.

Companies often add iodine to salt to keep people healthy. Iodine helps prevent health problems like goitre or intellectual disabilities. Some salt also has special agents added to stop it from clumping together. Even though salt is good for us, we should not eat too much. The World Health Organization says adults should eat less than 5 grams of salt a day.
