Rotisserie is a special way to roast meat. People often call this method spit-roasting. It works by skewering meat on a spit. A spit is a long and solid rod. This rod holds the food while it cooks. It might cook over a campfire or in a fireplace. You can also use an oven for this.

This method is great for large pieces of meat. You might cook a whole turkey or a chicken. Some people even cook large pigs this way. The constant rotation helps the meat cook very evenly. It also lets juices stay on the meat for more flavor.

There are two main ways to set up a rotisserie. A horizontal rotisserie holds the spit flat. This style is common for whole chickens or beef roasts. You must be very careful with balance here. If the meat is not balanced, it can be hard to turn. Loose chicken wings can even cause the machine to jam.

In a horizontal style, you can change the speed. You might rotate the meat faster at the start. This helps the inside get warm without burning the outside. Later, you slow it down to keep the juices on. Some people say 6 rpm is an ideal speed for cooking.

Another way to cook is using a vertical rotisserie. This holds the spit up and down instead of flat. The heat comes from the side or from below. Balance is not as important in this style. This is helpful because people shave meat off bit by bit.

The fat flows downward as the meat cooks. This process is called self-basting. It helps the meat stay moist and tasty. This method is used to make many famous foods. You might recognize Döner kebab from Turkey or Gyros from Greece. It is also used for Shawarma and Taco al pastor.

Rotisserie has a very long history. The word comes from French. It first appeared in shops in Paris around 1450. In old kitchens, a person had to turn the spit by hand. This person was often a boy called a spit boy. Later, people invented mechanical turnspits called roasting jacks. Some of these were even powered by dogs on treadmills! Eventually, machines used steam or clockwork to turn the rods. Today, most rotisseries use small electric motors to do the work.

Cooking with a rotisserie is a skilled job. In professional kitchens, a special chef is in charge. This chef is called a rotisseur. They handle all the spit-roasted and grilled foods. Even supermarkets use this method now. They use large industrial ovens to make many chickens at once. They use metal bars to hold the chicken firmly in place. This ensures the meat stays on the spit while it cooks. It is a way to make delicious food for many people at once.
