Rotisserie

language culture Maturity 5-7 Next article →

Rotisserie, also known as spit-roasting, is a specialized cooking method. It involves skewering meat onto a spit. A spit is a long, solid rod used to hold food. This rod rotates over a heat source. The heat might come from a campfire or a fireplace. It can also come from an oven. This method is ideal for large joints of meat. People use it for whole animals like pigs, chickens, or turkeys. The constant rotation ensures the meat cooks evenly in its own juices. This process also allows for continuous basting to add flavor.

In professional kitchens, the rotisserie is a vital tool. The term can refer to the mechanical device itself. It can also describe a restaurant that specializes in spit-roasted meats. In the Escoffierian brigade de cuisine, a specific chef manages this work. This chef is called a rotisseur. The rotisseur is responsible for all spit-roasted and oven-roasted foods. They may also handle grilled or fried items. This role requires great skill to manage heat and timing.

There are two primary styles of rotisserie: horizontal and vertical. A horizontal rotisserie mounts the spit flat. This style is often used for beef, pork, or whole chickens. It can be used over a grill or inside an oven. Some industrial versions use many spits at once. These are used to mass-produce meat for consumers.

Balance is a critical factor in horizontal cooking. If the meat is out of balance, it creates a heavy load. This load can cause the drive mechanism to fail. Even loose chicken wings can jam the mechanism. Therefore, skewering the meat requires significant skill.

Speed and heat management are essential for horizontal roasting. The rotation speed can change based on the food. Large animals like pigs often rotate at 1 rpm to 3 rpm. The inventor Ron Popeil claimed 6 rpm is an ideal speed. Generally, it is best to rotate meat faster at the start. This raises the interior temperature without burning the exterior. Once a crust forms, the rotation rate should decrease. This minimizes dripping and keeps juices on the meat. For horizontal spits over coals, this preserves maximum flavor.

Vertical rotisserie is a different method where the spit stands upright. Heat is applied from the side or from below. In this style, the balance of the load is less important. This is helpful because chefs shave meat off bit by bit. This method became popular in Istanbul during the 19th century. It may have been used to save space. It also allows the meat to "self-baste." This happens as the fat flows downward over the meat.

Many famous international dishes use the vertical rotisserie method. In Turkey, this style is used for Döner kebab. In Greece, it is used to make Gyros. The Middle East and Arab World use it for Shawarma. Mexico also uses this technique for Taco al pastor. These dishes all rely on the unique way vertical roasting cooks the meat. The constant flow of fat ensures the meat remains moist during the process.

History shows how the technology of the spit has evolved. The word rotisserie appeared in Paris shops around 1450. In medieval kitchens, a person turned the rod by hand. This person was often a boy known as a "spit boy" or "spit jack." Later, mechanical turnspits called roasting jacks were invented. Some were powered by dogs running on treadmills. Others used steam power or mechanical clockwork. Some used a turbine in the chimney for power. Today, most rotisseries are driven by simple electric motors.
