Barbecue is a versatile term used to describe many different things. It can refer to specific cooking methods using live fire and smoke. The term also describes the tools used for cooking, the cuisines produced, and the social gatherings centered around the food.

People value barbecue because it often serves as a way to bring communities together. Whether it is a quick meal or a long social event, it carries deep cultural meaning.

There are two primary ways to cook using these methods. The first is grilling, which involves direct, dry heat. This method uses a hot fire to cook food quickly in just a few minutes.

The second method is smoking, which is a much slower process. In smoking, food is exposed to smoke from smoldering wood or charcoal at low temperatures. This process often takes several hours to reach the desired internal temperature.

This slow heat allows the smoke to flavor and preserve the food.

Regional variations create distinct styles of barbecue across the globe. In the United States, the definition often depends on where you are. In the Southeast, barbecue usually refers to roast pork. In the Southwest, people often cook cuts of beef instead.

In American English, "grilling" is the fast process over high heat, while "barbecuing" is the slow process using indirect heat. This distinction helps chefs choose the right technique for different meats.

Different American cities have developed famous traditions. Kansas City barbecue is known for slow-smoked meats like beef, chicken, and lamb. These meats are often served with a thick, sweet sauce made from molasses and tomatoes.

St. Louis-style barbecue is famous for a specific cut of spare ribs. These ribs are trimmed into a rectangular shape to remove excess cartilage. South Carolina is unique because it uses four different types of sauces. These include mustard-based, vinegar-based, and both light and heavy tomato-based sauces.

The history of the word traces back to the Caribbean. The Arawak people used the term *barabicu* for a wooden framework of sticks.

This frame was set upon posts to suspend meat over a flame. Spanish explorers saw this and used the word *barbacoa* in print by 1526. Another ancient method involved digging a hole in the ground and using stones to retain heat. Large cuts of meat were placed above a pot to collect juices for broth. This method was even described by the African abolitionist Olaudah Equiano.

In South Africa, the tradition is called a *braai*. This is an informal gathering where people meet around an open fire.

Because of the warm weather, these gatherings are very common. Many people participate in a "bring and braai," which is a potluck-style event. Guests bring their own snacks, drinks, and meat to share. Cooking on the *braai* is often a bonding experience for families. While men may cook at the grill, women often prepare side dishes like *mielie pap*, a crumbled cornmeal.

Other cultures have their own specialized versions of these traditions. In South America, people enjoy the *asado*.
