People love it because it is a classic meal. Many call it a comfort food. This means it makes people feel happy and cozy. It is often served during special family holidays. You might see it at Christmas or Rosh Hashanah. Some families eat it for Easter or Thanksgiving too.

Cooking the bird involves a few careful steps. First, you remove the neck and giblets from the inside. Next, you truss the bird. This means tying it with string. You also fold the wings underneath. Then, you season the skin or the inside. The bird goes into a pre-heated oven. You should baste it with juices regularly. You can even stuff it with potatoes or chestnuts. A meat thermometer tells you when it is done.

Different parts of the world have their own special ways to cook. In Peru, they make pollo a la brasa. They use a special oven called a rotombo. This oven rotates the chicken on its own axis. It can use gas, coal, or wood. The wood often comes from the Prosopis pallida tree. In India, people make Tandoori chicken. They use a clay oven called a tandoor. They mix the meat with yogurt and spices.

There are many names for this dish. In Germany and Austria, people call it Hendl. You can find it at the Oktoberfest festival. People often eat it with potato salad or a Breze. In the United States, rotisserie chicken became a trend in the mid-1990s. Supermarkets sell these chickens at lower prices. Some stores like Costco sell 60 million roasted chickens every year. The Boston Market restaurant also specialized in this food.

Roast chicken connects many different traditions together. You can find it in many styles of food. For example, shawarma and gyros can use chicken. In Taiwan, the shawarma is called shāwēimǎ. Even famous stories mention it. In the book Dracula, a character wants a recipe for Paprika Hendl. This shows how much people value good food. Whether over a fire or in an oven, it is a global favorite.
