This heat usually hits the food from above, below, or the side. It is a popular method for cooking meat and vegetables very quickly. Most people use a gridiron, which is an open wire rack. This rack lets fat and juices drain away from the food.

When food gets very hot, a special change happens. This is called the Maillard reaction. It creates a tasty roast aroma and flavor. This reaction only starts when food reaches high temperatures.

Some cooks even use a method called grill-braising. This involves using a pot on top of the grill. You can brown meat first and then simmer it for hours. This makes the meat very soft and easy to eat.

This machine moves meat on a conveyor belt. It grills both sides of a patty at the same time. This idea started in 1898 in St. Louis, Missouri.

The Bridge and Beach Co. made the first vertical stoves for this. These stoves helped feed many factory workers in lunch spots. Today, many fast food places still use similar ideas to cook.

Grilling connects to many different parts of our lives. It can be a social event called a cook-out or a braai.
