Brisket is a special cut of meat from the chest of a cow.

It comes from the muscles near the ribs and the sternum. These muscles are very important for the animal. They support about 60% of the weight when the cow stands or moves. Because they work so hard, the meat has a lot of connective tissue. This tissue is made of fibers called collagen.

Because of these fibers, the meat starts out very tough.

To make the meat delicious, you must cook it the right way.

Long cooking times help the collagen turn into soft gelatin. This process makes the meat tender. Many people leave a fat cap on the meat to keep it moist. In the United States, people often use a spice rub or a marinade. They might cook it slowly over indirect heat from wood or charcoal. This is called smoking.

Chefs often use hardwoods like oak, pecan, hickory, or mesquite for flavor.

The word brisket has a very old history. It comes from the Middle English word "brusket." This word actually came from an even older word called "brjósk." This Old Norse word means cartilage.

Today, the meat is used in many different ways. In the United States, the whole boneless brisket is called IMPS 120. The meat can be split into two parts. The lean part is the "first cut" or "flat cut." The fattier part is the "second cut" or "point."

Different places have their own famous ways to eat brisket.

In Texas, smoked brisket is called the "National Dish of Texas." In Kansas City, people make "burnt ends" from the meat. These are often served on white bread. In Korea, brisket is used in a spicy soup called yukgaejang. It is also used in a dish called jang-jorim. In Vietnam, it is a main part of phở soup. Even in New Zealand, Māori people enjoy it in a dish called a boil up.

Brisket is a very versatile meat that connects many cultures.
