The meat is long and flat. It has a very noticeable grain. This grain is made of meat fibers. Because of this, the meat can be chewy. People love it for its unique texture.

Cooking this meat well takes some skill. Chefs often use seasoning and marination first. Then they cook it on a hot grill. You can also pan-fry or broil it. Some people braise it to make it soft. It is very important to cut it right. You must cut across the grain. This makes the thin pieces feel smooth.

This cut has a long history. The term "flank steak" first appeared in 1902. Steaks in general started in Italy and Scandinavia. In the late 1800s, it was not very famous in Europe. Butchers sold it for lower prices then. In North America, it grew popular in the mid 1900s. Soldiers returning from WWI and WWII helped it rise.

Different places use many different names. In Brazil, it is called bife do vazio. People in Colombia call it sobrebarriga. In Argentina and Uruguay, they say bife de vacío. Spain and Cuba often call it falda. South Americans have eaten it since the late 1700s. They use the whole animal to avoid waste.
