A ribeye is a very popular steak from cattle.

It comes from the rib section of the animal. People often call it a premium steak because it is so tender. You might find it in many different cuisines around the world. It is the same as a prime rib but without the bone. In the state of Oklahoma, it is even the official state steak. This cut is a favorite for many people to eat.

This steak is made of several different muscles working together.

The largest part is the longissimus dorsi muscle. Many people call this the "eye" of the ribeye. There is also a muscle called the spinalis. This part is often called the "ribeye cap." A small muscle called the complexus sits at the front. A butcher might trim that small muscle off.

Different lands have used this cut for a long time.

In France, they call a similar steak entrecôte. In French Canada, people in Québec call it faux filet. This name means "false" fillet in English. In Austria, they call it Rostbraten. They usually cut that meat very thin. It is between 0.5 and 1 cm thick.

Many special names exist for this meat in other places.

In Australia and New Zealand, it is a Scotch fillet. They also call the boneless version a whiskey fillet. In Argentina, the ribeye is called ojo de bife. Chileans call the boneless version lomo vetado. In Spain, they use the French name entrecot. On the West Coast of the United States, it has other names too. You might hear it called a market steak or a Spencer steak.

Sometimes a butcher makes the steak look very unique.

They might leave a long rib bone in the meat. This is called a tomahawk chop. The bone stays at least five inches long. The butcher cleans the meat and fat from the bone. This makes the bone look like a handle. It is a very distinctive way to serve the steak.
