This meat is very soft and tender. Many people think it is a premium steak. It is made of a few different muscles. One part is the longissimus dorsi. People call this the "eye" of the steak. Another part is the spinalis. This part is called the "ribeye cap." A butcher might trim a small muscle called the complexus off the front.

People around the world use different names for this meat. In Australia, they call the boneless cut a Scotch fillet. In Argentina, they call it ojo de bife. In Chile, it is known as lomo vetado. In France, it is called entrecôte.

Sometimes, a butcher leaves a long bone in the meat. This is called a tomahawk chop. The bone can be five inches long. It looks like a handle for the steak. This cut is the state steak of Oklahoma. It is a very popular food for many meals.
