In North America, it usually means beef. It comes from a part called the tenderloin. This part runs along the spine of a cow. The tenderloin looks like two long snakes.

This meat is very soft to eat. It is also very lean. It has a mild flavor. Because of this, people often add sauce. Some people wrap it in bacon for more taste. There is not much of this meat on each animal. This makes it one of the most expensive cuts.

In France, the name means something else. There, it often means pork or veal. In the UK, people call it fillet steak. Other places have their own names too. In Spain, they call it solomillo. In Belgium, it is called filet pur. Some big steaks also have this meat in them. A Porterhouse steak has a small piece of filet on one side. The other side has a strip steak. This makes it a very big meal.
