Roasting is a special way to cook using dry heat. Hot air moves all around the food to cook it evenly.

This method makes food taste wonderful through a process called browning. When the surface of food gets hot, it changes color and flavor. You can roast many different things in this way. Most people roast meats like chicken, turkey, or beef. You can also roast vegetables such as potatoes, carrots, and squash.

Even fish like trout can be roasted whole.

There are a few different ways to handle the heat. Some people use low heat to cook large pieces of meat. This is called slow-roasting, and it helps the meat stay soft. It also helps a tough part of the meat called collagen break down. Other people use high heat to cook food much faster. High heat is great for making a dark, tasty crust on the outside.

Some cooks use a mix of both high and low heat. They might start with high heat to brown the food first. They might also use a spit, which is a rod that rotates the food. This rotation helps the heat touch every side of the meal.

Roasting is one of the oldest ways people have cooked. Long ago, people cooked meat over an open fire. They used racks or skewers to hold the food near the flames.

Because it took a lot of work, roasting was often for special occasions. In the past, wealthy families used servants to watch the meat. They had to turn the food often so it did not burn. By the 1860s, more families could afford their own stoves. This changed how people cooked at home. Eventually, the word "baking" began to be called "roasting" in ovens.

History books show us many old recipes for roasted foods. A book from around the year 1300 called Le Viandier has twenty-nine recipes. These recipes were for various types of roast meats.

Another book from 1393 is called Le Ménagier de Paris. It shows that roasts were a main part of big meals. In the 1500s, menus even had a special stage just for roasted items. These meals included things like small game or even suckling pig. People would often serve sauces on the side of their roast. This helped keep the meal interesting and delicious.

Today, roasting is a very common way to make a meal. In places like Britain or Australia, people might call a roast a "joint."

You can even make a "traybake" by roasting meat and vegetables together in one pan. This is a popular way to cook in the United States and Britain. Some people even use plastic bags in the oven to keep the meat moist. Whether you use a modern oven or a traditional spit, roasting brings people together. It turns simple ingredients into a centerpiece for a happy meal.
