Searing is a special way to cook food. It uses very high heat to make a brown crust.

Cooks use this for meat like beef, pork, or poultry. They also use it for seafood like tuna. This method makes food look much better. It also makes the food taste more interesting. The crust feels different from the soft inside. This contrast is a big part of why people love it.

To sear food, the surface must be very hot. It needs to be hotter than 300 degrees Fahrenheit. Because of this, the meat must be dry. If there is water on the surface, it will boil instead.

Searing happens through the Maillard reaction. This is a change between amino acids and some sugars. It is not the same as caramelization. Caramelization only affects sugars or simple carbohydrates. This reaction is what creates those tasty brown flavors.

Many people believe searing "seals in the juices." This idea came from a man named Liebig. He wrote about this in his book around 1850. He thought muscle tissue held important things for humans. Famous cooks like Escoffier also believed this idea.

However, tests in the 1930s showed something else. Seared meat can actually lose more moisture. High heat can destroy cells and let liquid out. This is why some cooks sear at the very end. They want the flavor without losing too much liquid.

There is also a way called reverse searing. This is great for thick pieces of meat.

First, you cook the meat at low heat in an oven. You do this until the center reaches the right temperature. Then, you use a hot pan to sear the outside. This helps the meat have a pink center from wall to wall. It stops a thick grey band from forming on the steak. This method keeps the inside cooking very even.

Searing is used in many different ways. You might see it in grilling or roasting. It is also used in sautéing or braising.

In braising, the seared surface helps color the cooking liquid. It also adds flavor to the liquid. You can use similar methods like browning or blackening. These methods help brown all sides of the food. They are often done before the food goes into the oven. Searing is a key skill for many cooks.
