Searing is a way to cook food with high heat.

Most people use it for meat or seafood. This method makes a brown crust on the outside. This crust is made by a change called the Maillard reaction. This reaction happens between sugars and amino acids. It makes the food taste much better. The brown crust also makes the food look nice. It feels different from the soft inside. This makes the food more interesting to eat.

Some people think searing seals in the juices. They think it keeps the meat moist. But tests show this is not true. Searing can actually let out more moisture. High heat can break cells and let liquid out. Some cooks sear meat at the very end. This helps them get flavor without losing too much liquid. There is also a way called reverse searing. You cook thick meat at low heat first. Then you use high heat at the end. This helps the inside stay pink and even.
