Sautéing is a fast way to cook food.

Use a small amount of oil or fat. You need a shallow pan. Heat the pan to a medium-high level. This method uses heat from the pan to cook the food.

Cut your food into small or thin pieces. This helps the food cook very fast. Spread the food in one layer. Do not pile it up. This lets steam escape. It also helps the food turn brown. Brown food tastes good and stays moist.

You must move the food often. You can use a tool to stir it. You can also jerk the pan with your hand. Use a firm grip on the handle. Move your elbow to shake the pan. This makes the food jump or toss. Do not shake it too much. Too much shaking can cool the pan down.

Some people use clarified butter for this. Regular butter might burn too fast. You can also use sunflower oil. If you cook meat, you can make a sauce. Use the bits left in the pan to do this.
