People soak them in brine or vinegar. This makes them taste sour. Some pickles are sweet, too.

People have eaten pickles for a very long time. Some think they were made for workers in China. Others think they started in Mesopotamia long ago.

There are many ways to make a pickle. Brined pickles use salt and water. They use tiny bacteria to turn sour. This is called fermentation. You can add garlic or dill for flavor.

In New York, some pickles are "full-sour." These stay in the brine for a long time. "Half-sour" pickles stay in for a short time. They are still bright green and crisp.

Some pickles are very different. Bread-and-butter pickles are sweet and sour. They use sugar and spices. In the southern United States, children eat "koolickles." These are pickles soaked in fruit drink powder. They often turn a bright pink color. You can even eat pickles fried in batter!
