The word "cure" comes from a Latin word. It means to take care of something. People have used these skills for thousands of years.

One way to cure fish is with salt. Salt pulls water out of the fish. This stops tiny germs from growing. Many people use sea salt for this. Some people also add sugar. They might use honey or maple syrup. The sugar makes the salt taste less harsh.

Another way is by using smoke. People burn wood to make smoke. This smoke helps seal the outside of the fish. Some methods use heat to cook the fish. Other methods do not use heat.

Different places have their own special fish. In Norway, people eat dried cod. In Japan, people make katsuobushi. This is tuna that is smoked and dried. In Peru, people use citrus juice to cure fish. This dish is called ceviche.
