Curing is a way to save food. It helps meat, fish, and vegetables last longer. People have used it for thousands of years.

In the past, it helped people stay safe during food shortages. Today, many people cure food for its special taste.

Salt is the main part of curing. It draws water out of the food. This makes it hard for tiny germs to grow.

Some people also add sugar. Sugar can make the salt taste less harsh. It also feeds good bacteria.

Some recipes use nitrates or nitrites. These are salts that help keep meat pink and red. They also help stop a disease called botulism.

Because these can be unsafe in high amounts, laws limit how much is used.

People also use smoke to cure food. Smoke can seal the outside of the meat. This makes it harder for germs to get inside. Some smoke is hot and cooks the meat. Other smoke is cold and only adds flavor.
