It is made through a set of steps called fermentation. This means good tiny living things grow in the food. They help keep bad things from growing. This makes the meat safe to eat.

Makers start by grinding meat. They usually use pork or beef. Some use turkey or even goose.

They mix the meat with salt, sugar, and spices. They might add garlic, herbs, or wine too. Then, they stuff the mix into a casing. This is a thin tube that holds the meat.

Next, the meat must hang up to dry. In warm places, the sun helps. In cold places, makers use smoke.

This drying process removes water. It makes the meat stay good for a long time.

Salami has many flavors. Some taste tangy because of the tiny bacteria. Others taste smoky or sweet.
