They do this by breaking down sugars like glucose. This can happen even when there is no air. In 1876, Louis Pasteur called it "life without air."

One common type is ethanol fermentation. This happens when yeast turns sugar into ethanol and carbon dioxide. The gas makes bubbles that help bread dough rise. This same ethanol is used in many drinks. Humans have used fermentation to make and save food for 13,000 years.

Another type is lactic acid fermentation. This happens in your muscles when you need energy very fast. It also happens when bacteria turn milk sugar into lactic acid. This makes yogurt taste sour.

Fermentation is not as efficient as using oxygen. It makes much less power from sugar. Still, it is very useful. We use it to make fuel for cars and to make many foods. It helps us make things like cheese, bread, and beer.
