Other additives help make food better in new ways.

There are many kinds of additives. Acidulants, like vinegar, make food taste sour. Colorings make food look more bright or pretty. Some additives are called emulsifiers. These help water and oil stay mixed. This is how we make ice cream or mayo.

Some additives are called fortifying agents. They add vitamins or minerals to food. This makes the food more healthy.

Rules keep these items safe. In Europe, they use E numbers to name them. In the United States, the FDA checks them. They make sure additives are safe to eat. Some things might come from the package. These are called indirect additives. Testing takes a long time. In the EU, it can take ten years to approve a new one. This includes five years of safety tests.
