Fat helps our bodies in many ways. It keeps us warm. It also protects our organs from shock. Fat helps us absorb vitamins like A, D, E, and K. These are called fat-soluble vitamins. This means they need fat to move through our bodies.

Most fats are triglycerides. A triglyceride is a molecule made of three fatty acids. These are attached to a part called glycerol.

Some fats come from plants, like olive oil. These often have unsaturated fats. Other fats come from animals, like butter. These often have saturated fats. Our bodies can make most fat we need. But we must eat two special types called essential fatty acids. We cannot make these on our own.
