Food additive

language culture Maturity 5-7 Next article →

Food additives are substances added to food to change how it looks or tastes. They can also preserve flavor or help food stay fresh. Some people have used additives for centuries to keep food from spoiling. For example, salt, sugar, smoke, and vinegar are very old ways to preserve food. These methods help things like bacon, sweets, and wines last longer. In the late 20th century, many new additives were introduced with processed foods. These can be natural or artificial in origin.

There are many different groups of additives that do different jobs. Acidulants like citric acid or vinegar make food taste sour. Colorings are added to make food look more attractive or replace lost colors. Some additives, called emulsifiers, help water and oil stay mixed together. This is how we get smooth textures in mayonnaise, ice cream, and milk. Bulking agents like starch add size to food without changing the taste. Other additives, called humectants, help prevent food from drying out.

Rules and numbers help us identify these substances safely. In Europe, approved additives are given a special E number. For instance, acetic acid is labeled as E260 in Europe. Other countries might just use the number 260 without the letter E. In the United States, the FDA uses a label called GRAS. This means the additive is considered safe for people to eat. Australia has also used a labeling system for packaged foods since 1987.

Safety is the most important part of using additives. In the past, some additives like boric acid were used but then banned. Boric acid was used as a preservative from the 1870s until the 1920s. It was used again during World War II but finally banned in the 1950s. In the United States, a rule called the Delaney clause says no cancer-causing substances can be additives. This rule came from the Federal Food, Drug, and Cosmetic Act of 1938. Scientists must study many things, like how a substance moves through the body.

Testing new additives is a very slow and careful process. In the European Union, it can take ten years or more to approve one. This includes five years of safety testing and two years of evaluation. The European Food Safety Authority, or EFSA, helps with this work. In the United States, a company must submit a petition to the FDA. They must provide the chemical makeup and all safety reports. This ensures that the food we buy is safe for everyone to enjoy.
