People love these peppers for their unique heat and flavor. Most people eat them while they are still green. Sometimes, the peppers are allowed to ripen fully. They can turn red, orange, or even yellow. Red peppers are usually hotter than green ones. The heat level is measured on the Scoville scale. A jalapeño usually scores between 4,000 and 8,500 units. This heat comes from tiny white or yellow parts near the seeds. These parts are called vesicles. They are found in the placenta membrane.

Growing these peppers takes careful work. The plants grow tall and produce 25 to 35 pods. A growing period usually lasts 70 to 80 days. The plants need at least 6 to 8 hours of sunlight every day. They also need well-drained soil to stay healthy. Warm weather is best for these plants. Seeds grow best at 80 degrees Fahrenheit. If the temperature goes above 95 degrees, they might not grow well. Farmers also give them nitrogen to help them make more pods. This helps the plant grow many leaves and many peppers.

Jalapeños have a very long history. The Aztecs used them long before the Spanish arrived. They sold fresh chilies in their markets. They also made mole, which is a special sauce. They even made chipotles by smoking ripe jalapeños. The name jalapeño is Spanish. It means "from Xalapa." Xalapa is a city in Veracruz, Mexico. A man named Vicente Jiménez invented a way to pickle and can them there. This helped people enjoy the peppers for a long time. Today, many different kinds of jalapeños are grown around the world.

Many places grow these peppers for food. In 2009, Mexico produced 619,000 tons of them. Most of that crop came from Chihuahua. Other places like Sinaloa and Jalisco also grow many. In the United States, California grows the most. New Mexico and Texas are also big producers. In 2002, the jalapeño crop in New Mexico was worth $20 million after it was processed. Some companies, like La Costeña, control a huge part of the world market. They export many peppers to the United States. Other countries like China, Peru, Spain, and India also grow them.

There are so many ways to enjoy this pepper. You might eat them in a salsa or on nachos. Some people like jalapeño poppers, which are stuffed with cheese. You can also find them in Vietnamese pho or on pizza. Some people even make jalapeño jelly. There are special types of peppers too. Some, like 'TAM Mild Jalapeño,' are bred to be less spicy. Others, like 'Grande,' are much hotter. You must be careful when touching them. The oils can sting your eyes or skin. It is a good idea to wear gloves when you cook with them.
