It is built to store, transport, and cook food on the move. Some trucks, like ice cream trucks, sell prepackaged treats.

Other trucks have full kitchens to cook meals from scratch. They might serve quick snacks like tacos, pizza, or hot dogs.

Since the 2010s, many trucks have become gourmet or specialty shops. These trucks offer unique food from many different cultures and regions. They can also serve drinks like coffee, tea, or juice.

Running a food truck involves many important steps. Some cooks prepare everything in a large kitchen first. Then, they load the food into a warmer on the truck. Other trucks cook everything right inside the vehicle. This requires special equipment and careful planning for space. Owners must also follow many rules to keep food safe. They need permits and must pass health inspections.

These rules help make sure the food is good to eat. In some cities, like Toronto, drivers even need special licenses.

Food trucks have roots that go back a long time. In the 1800s, people used horse-drawn wagons to move food. A famous example is the Texas chuckwagon used by cattle workers. In 1866, Charles Goodnight fitted a wagon with shelves and drawers.

Another early version was the lunch wagon. In 1872, Walter Scott created a "kitchen on wheels" in Rhode Island. He sold sandwiches and coffee to workers at a newspaper office. By the 1950s, the military even used mobile canteens on bases.

Today, the food truck industry is very large and busy. In the United States, it is a billion-dollar business.

Some trucks become very successful and grow into big companies. For example, Coolhaus grew from one truck to many locations. You can even use social media to find your favorite truck. Apps like Facebook or Twitter show where they are parked. This makes it easy to find special meals anywhere in the city.
