A food truck is a large motorized vehicle or a trailer designed for food service.

These vehicles are equipped to store, transport, cook, prepare, serve, and sell food. Some trucks, such as ice cream trucks, focus on selling frozen or prepackaged items.

Many other trucks operate as mobile kitchens. They prepare food from scratch on-board or reheat items from a brick-and-mortar commercial kitchen. Common menu items include staples like hamburgers, tacos, and pizza. However, since the pop-up restaurant phenomenon of the 2010s, gourmet and fusion cuisines have become very popular. Food trucks are a major part of the global street food industry. This industry serves an estimated 2.5 billion people every single day.

The way a food truck operates depends on its specific setup and local laws. Some trucks use an on-board kitchen to cook meals immediately. Others must prepare all food in a stationary commercial kitchen first. These cooks then wrap and label the food before loading it into a warmer.

In some cities, like Toronto, operators must follow strict requirements. They need business insurance, food handler certificates, and specific driver or assistant licenses. They must also obtain permits for every municipality where they operate. Because they move frequently, they must pass regular health inspections to ensure safety. Maintaining adequate hot water for washing hands and rinsing vegetables is a common challenge for mobile vendors.

Food trucks can be categorized by the type of food and service they provide. Traditional trucks often serve fast food or finger foods to people on the go. Some are known as "roach coaches" or "gut trucks" because they serve blue-collar workers at construction sites or factories.

In contrast, gourmet food trucks focus on specialty or regional cuisines. These trucks often seek a specific niche to find success. One truck might specialize only in lobster rolls, while another focuses on unique burgers.

Some trucks even serve as mobile advertising for specific brands or companies.

The history of mobile food service begins with horse-drawn vehicles in the 19th century. The Texas chuckwagon is a primary precursor to the modern American food truck. In 1866, cattle rancher Charles Goodnight fitted an Army wagon with shelving and drawers.

These wagons carried dried beans, coffee, and salted beef to sustain cowhands on long trails. Another relative was the "lunch wagon," a horse-drawn street car. In 1872, Walter Scott created a "kitchen on wheels" in Rhode Island. He sold sandwiches and coffee to journalists at a newspaper office. By the 1950s, the U.S. Army even used mobile canteens on military bases.

Economic shifts have significantly impacted the growth of this industry. During the 2010s, the Great Recession caused many high-end restaurant chefs to lose their jobs. For these experienced cooks, a food truck offered a smaller financial investment than a permanent restaurant. This led to a surge in gourmet truck popularity. In the United States, the industry was a $1.2 billion business before growing to over $2.7 billion by 2017.

This growth has allowed some businesses to expand into massive fleets. For example, the ice cream maker Coolhaus grew from one truck in 2009 to 11 trucks and two storefronts by 2014.

Large gatherings known as food truck rallies and parks are also very popular. These events bring many trucks to one location to attract customers through variety. On August 31, 2013, Tampa, Florida, hosted the world's largest food truck rally with 99 trucks. The city broke its own record in 2014 by hosting 121 food trucks.

This event holds the Guinness World Record for a food truck rally. Other events, like the Chicago Food Truck Festival, attract over 60,000 guests over two days. These gatherings turn mobile dining into a large-scale social experience.

Food trucks interact with many different social and legal systems. They often face competition and pushback from brick-and-mortar restaurant owners. In Chicago, regulations once prevented trucks from cooking on-board. Even after rules changed, trucks must park 200 feet away from restaurants.

Critics call these "anti-competitive" rules because they limit where trucks can work. To manage their business, many owners use social media like Facebook or Twitter. This allows customers to track their exact location and see new menu items in real time. As technology advances, vendors are now adopting digital ordering and eco-friendly power systems.
