A food cart is a mobile kitchen designed for the street.

These units allow vendors to prepare and sell food directly to passers-by. They are common features in cities all over the world. Unlike food trucks, food carts do not travel under their own power. They rely on external methods for movement. This mobility allows vendors to find the best locations for sales. They can also transport goods easily between storage areas and the marketplace.

There are two primary styles of food carts used today. The first style functions as a small booth for the vendor. In this setup, the vendor sits or stands inside the cart. They serve prepared food through a service window.

The second style is an open setup. Here, the vendor stands next to the cart. The interior space is used entirely for storage and cooking machinery. A grilling surface is a very common feature in these carts. The specific design is usually determined by the type of food being sold.

Movement for these carts varies based on their size and location. Many modern, larger carts are towed behind 4x4 vehicles. However, smaller hand-towed carts remain common in many areas. These are useful when access to a location is restricted. Some carts are even pushed by animals. The scale of the cart must match the environment where it operates. This flexibility helps vendors reach hungry people in many different settings.

History suggests that food carts began with early Greek and Roman civilizations. During this time, traders converted existing hand-carts into mobile trading units. They also used smaller carts drawn by animals.

The arrival of railways caused the use of food carts to explode. This growth happened for several practical reasons. First, passengers in early open carriages needed food and drink to stay warm. Second, early locomotives required frequent stops to take on water and coal. These stops provided natural breaks for passengers to eat.

Furthermore, many early trains lacked buffet or dining cars. Passengers also needed refreshments when switching trains or arriving at destinations. This was especially important for poorer travelers. They often could not afford to stay in railway-owned hotels. This created a successful relationship between railways and mobile traders. In some places, this led to concession stands. This concession-based operation is still seen in parts of Africa and Southeast Asia.

Traders even adapted old railway station luggage carts. These were already sized to fit through station doors and lifts.

Modern engineering has introduced new materials to food cart construction. In the 21st century, many carts are made of stainless steel. Others use aluminum or fiber reinforced plastic. These materials provide durability and function for street use. Some highly advanced versions have even been developed to drive themselves.

Many modern carts are also directly associated with established restaurants. These carts often serve the exact same menu as the main restaurant. This allows a business to expand its reach beyond its physical building.

Food carts connect to many different parts of urban life. They are part of the street culture in many global cities. They also link to the broader field of mobile catering. From the small stands in Jakarta to the hot dog carts in New York, they serve a vital role. They provide quick meals to a wide variety of people. Whether they are high-tech or traditional, they remain a key part of how cities eat.
