It usually has a soft, warm center and a crisp outer layer. To make one, you combine a filling with a thick binder. This binder might be mashed potatoes or a thick white sauce called béchamel. You can also use wheat flour or bread as a binder. After shaping them, you coat them in breadcrumbs and deep-fry them. This creates the signature crunch that the name implies. The word comes from the French word "croquer," which means "to crunch."

There are many ways to fill a croquette. Some people use finely chopped meat, like ham or beef. Others prefer seafood, cheese, rice, or mushrooms. You can even find sweet versions filled with fruit and pastry cream. In Belgium, popular versions include grey shrimps or cheese.

In Poland, they are often made like thin pancakes stuffed with cabbage or meat. In India, the potato-filled aloo tikki is a very popular snack. These different fillings allow people to use whatever ingredients they love most.

Croquettes have a long and interesting history. They began in French cuisine and were once a special delicacy. In 1691, the chef for King Louis XIV described a recipe using truffles and cream cheese. An even older recipe from 1693 by François Massialot used meat, truffles, and marrow.

Long ago, families used croquettes to avoid wasting food. They would take leftovers from roasted chicken or broth soup and turn them into something new. This clever way of cooking helped people make the most of every meal.

Different countries have their own special versions of this snack. In the Netherlands, they are a huge part of life. Research from 2008 shows that Dutch people eat about 350 million kroketten every year. That is an average of 29 per person!

Some are even as large as a world record croquette in Assabu, Hokkaido. Whether they are small like a walnut or large like an egg, they are found in many places.

Today, you can find croquettes in many different forms. You might see them as a fancy appetizer or as quick fast food. In Spain, they are a common tapas dish served in many bars. In Italy, they are a popular street food found at fried food shops. Some people even eat them on a bread roll, like the "McKroket" at McDonald's. From frozen snacks in a supermarket to handmade treats in a restaurant, they remain a beloved food around the globe.
