A convection oven is a special tool used to cook food quickly and evenly.

In a regular oven, the air stays mostly still. This can cause hot spots at the top and cool spots at the bottom. A convection oven solves this by using a fan to move air around. This fan helps to remove a thin layer of cool air around the food. Scientists call this a thermal boundary layer. This layer acts like a blanket that slows down heat. By blowing this blanket away, the oven cooks food much faster.

To make this work, the oven uses a specific design. It has a heating element placed near a small fan.

When the oven turns on, the fan circulates the hot air throughout the chamber. This moving air transfers heat to the food more quickly than still air. Because the heat moves so well, you must use a lower temperature. Most people set the heat about 25 degrees lower than a normal oven. This helps prevent the outside of the food from overcooking before the middle is ready.

People have been working on these ovens for a long time. The very first oven with a fan was invented in 1914. However, it was never sold in stores back then. The first convection oven that many people actually used was the Maxson Whirlwind Oven. This model was introduced in 1945. Since that time, convection ovens have become very common in homes and businesses.

In recent years, these ovens have become even more popular in different forms. In 2006, a group called Groupe SEB released the first air fryer in France. Later, in 2010, Philips introduced the Airfryer brand at a big fair in Berlin. These small countertop ovens are actually just tiny convection ovens. They are very popular in the United States right now. In 2020, about 36% of US homes had one. By 2023, that number grew to an estimated 60% of households.

Today, you can find convection technology in many different places. Large industrial ovens are used in factories to make parts for aircraft.

There are also impingement ovens that use high-speed air to make things like chicken nuggets very crispy. Some even use steam to keep food moist. You might even see an air fryer in your own kitchen. Whether it uses a basket or a moving paddle, it is all using the same clever science of moving air.
