Chanterelles are a special group of fungi. They come in colors like yellow, orange, or white. These mushrooms have a meaty texture. Most are shaped like a funnel. The name chanterelle comes from the Greek word kantharos. This word means "tankard" or "cup." This is a great way to describe their shape.

To see how they work, look under the cap. Most species have rounded, forked folds. These folds are not like true gills. Instead, they run almost all the way down the stipe. The stipe is the stem of the mushroom. It tapers down smoothly from the cap. Many of these fungi have a fruity smell. They might even smell like apricots. They often have a mildly peppery taste.

People have enjoyed these mushrooms for a long time. Records show people ate them in the 1500s. They became very famous in the 1700s. This happened because of French cuisine. They were often served in palace kitchens. For a long time, they were food for nobility. In 1836, a scientist named Elias Fries called them one of the best edible mushrooms.

These mushrooms are very useful in the kitchen. Most of their flavor comes out when you cook them in fat. This means they are great in butter or oil. You can use them in soups, soufflés, or cream sauces. Some people even dry them to keep their flavor. They are also very healthy. Raw chanterelles are 90% water. They have B vitamins and iron. In January 2024, the California golden chanterelle became the official mushroom of California.
